Also love the chart on how to treat cast iron pans. I believe it's true they can last forever--or, at least multiple human lifetimes--if cared for. I have one my so picked up in a second-hand store that has a finish as smooth as silk. I don't know how old it is, but I'm guessing many decades. It is a treasure. As for stainless steel, it can be fine, but most of it has nickel, which can leach out and is problematic for some. Cast iron gets my vote for #1.
